Caramel Corn Snack Mix

8 cups popped popcorn
4 cups crispy rice cereal squares
2 cups small pretzel twists
1 cup pecan halves
1 cup packed brown sugar
½ cup butter
¼ cup light corn syrup
1 teaspoon vanilla extract
½ teaspoon baking soda
Preheat oven to 300 degrees F. Mix the popcorn, cereal, pretzels, and pecans together in a large bowl. Heat the brown sugar, butter and corn syrup in a saucepan over medium heat, stirring until the mixture comes to a boil. Reduce the heat to medium low and let it sit for 5 minutes without stirring. Pull the pan from the heat and mix in the vanilla and baking soda. Pour this over the popcorn mixture and toss until everything is evenly coated. Bake for 15 minutes, stir, then back for 15 more before spreading onto a large piece of parchment paper. Once it's completely cool, break up the snack mix into smaller pieces.
Fruity Fun Skewers

5 large strawberries, halved
¼ cantaloupe, cut into balls or cubes
2 bananas, peeled and cut into chunks
1 apple, cut into chunks
Simply spear the strawberries, cantaloupe, banana and apple pieces alternately onto the skewers, and you're done!
Note—the bananas and apples tend to brown quickly. You can drizzle the fruit with lemon juice or a lemon-lime soda to prevent browning, or choose other fruits such as grapes, watermelon, or pineapple to replace them.

2 (6 ounce) cans tuna, drained
3 tablespoons mayonnaise
1 ½ tablespoons pickle relish
1 tablespoon chopped onion
1 tablespoon chopped celery
1 teaspoon lemon juice (or to taste)
1 pinch garlic salt (or to taste)
4 leaves lettuce (optional)
4 (8-inch) flour tortillas, warmed
Mix the tuna, relish, mayo, onion, celery, lemon juice, and garlic salt in a bowl. Place a leaf of lettuce on each tortilla and spoon the tuna mix alongside. Fold the opposite edges of the tortilla over the filling, rolling one of the edges around it burrito-style.
Easy Granola Bars

3 cups quick oats
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter, melted
1 cup flaked coconut
1 cup sliced almonds
1 cup miniature semisweet chocolate chips
½ cup sweetened dried cranberries
Preheat oven to 350 degrees F and grease a 9x13 inch pan. Mix the oats, sweetened condensed milk, butter, coconut, almonds, chocolate chips and cranberries in a large bowl with your hands until everything is thoroughly blended. Press the mixture into the bottom of the pan and bake for 20 to 25 minutes (if you like crunchier granola, bake it a little longer; a light browning on the edges will make moist, chewy bars). Let the pan cool for 5 minutes, then cut the granola into squares and let them completely cool.

8 slices salami, rolled
8 (1/2 inch) cubes mozzarella cheese
8 pitted black olives
4 grape tomatoes, halved
4 marinated artichoke hearts, drained and halved
8 leaves fresh basil, rolled
8 bamboo toothpicks
8 teaspoons olive oil
Poke each salami roll, mozzarella cheese, olive, tomato, artichoke heart, and basil roll onto each toothpick, and drizzle olive oil over each.
